Starred gastronomic chef in 2019
Jose Bailly, starred gastronomic chef in 2019, followed a first training as sous-chef in a 5* hotel "Relais et Châteaux" in Saint-Tropez, La Bastide de Saint-Tropez. In 2015, he held his first position as head chef at the "Châteaux hotel and collection" establishment classified as a remarkable table by the group, the Hostellerie La belle Aurore****.
Today, he is the chef of the Hotel Les Roches Rouges*****, but also executive chef of the "Hôtels d'en Haut" including the Hotel le Fitz Roy***** in Val Thorens and the Hotel des 3 Vallées in Courchevel (Savoie).

Starred gastronomic chef in 2016
Philippe Jourdin, starred gastronomic chef in 2016, has had a fine career. After several stints in starred restaurants, the Louis XIII (Paris), the Royal Palm Beach in Marrakech... he returns to the Terre Blanche team in 2015 after having already worked there between 2003 and 2010 where he was rewarded with two Macaroons and three Toques at the Gault Millau. In 2016, he was again awarded a star in the Michelin Guide for the gastronomic restaurant "Le Faventia".
