Parce qu’il n’est de meilleur connaisseur de viande ou de légumes que le berger ou le jardinier, meilleur spécialiste de gibier ou de poisson que le chasseur et le pêcheur, le chef José Bailly a sourcé dans la région maraichers, fromagers, oléiculteurs, apiculteurs qui lui livrent chaque jour leurs produits de la mer et du jardin.
Un rosé de Provence, des bulles italiennes, un blanc de Macédoine ou un rouge catalan… Les terroirs méditerranéens irriguent la carte des vins composée uniquement de vins naturels. Les raisins sont travaillés sans désherbants, pesticides, engrais, insecticides ou autres produits de synthèse et vendangés manuellement. Pas de standardisation, les vins sont au plus près de la qualité de goût des raisins et puisent leur typicité dans leurs terroirs respectifs. Les vignerons s’efforcent de travailler les vignes et les vins en respectant la nature des sols par un travail long et minutieux.
Au restaurant étoilé “Récif”, le chef José Bailly a imaginé une cuisine locale inventive et radicale, travaillant avec imagination les produits de la mer et du jardin déclinés dans deux menus. De la tomate à l'olivier, le Loup de Méditérranée, le Décapode et son jus abyssal, se dégustent sur la terrasse avec la mer en ligne de mire. En 2019, le Guide Michelin attribue une première étoile au restaurant des Roches Rouges.
